I own a security company, and I would like to offer my services (night watch of their vehicle) to people who are forced to leave their vehicle outside during the night. I know that they are often the target of robbers.
Which professionals are more likely to keep tools that are expensive, not too cumbersome, and easy to resell (no serial numbers or niche application), as I assume that they could be good customers for my security company ?

You do sound suspicious. Like asking which bank is most likely to have a lot of cash on hand,( so you can ‘secure it ‘ of course)
no sweat/get to police and ask because they will have the whereabouts of losses in the area/once you are registered you can contact the people of your service
