Why would you hire someone dumb?

Well you need a good balance between paying good dividends/salary, giving job appreciation, good leadership etc. so as to make your employee(s) happy working for you and rather not taking the risk of establishing his own company. Some good business management books might cover this.
Alternatively you can keep your employee(s) on a need to know basis.

It’s good to hire someone smart, remember you also learn from them, fresh ideas in a new growing business it’s essential, since you said the market it’s tight.
Why spend most time focusing on if he quits, during that time while working with you, it’s a step forward for you too, focusing on growing other departments/sectors for the company.
As Business man you need a creative team, players.
These no secrete in business, it’s how you able to communicate with you clients, in a manner that you would like them to come back/do business with you.
All the best with your business.

You need to do a few things here.
    1. You can have them sign a non-compete clause.
    2. You can entice them with benefits and stock options that might keep them working for you. They may not have the entreprenurial spirit that you have and working a job may be fine with them. Profit sharing and stock options will keep people working with you.
